The Shapton Pro 120 grit stone is quite the metal-mover. Whenever I need to fix a broken tip, reprofile the edge, swedge, point or just remove a giant chip – this is the stone I go to first. It’s coarse, fast and white; & it’s one of my favorite stones. It’s harder than the 220x and 320x, and 1k; it’s close to the hardness of the 1.5k. If you have an old chef knife with a rounded over bevel that needs to be thinned and reset – this is your new best friend. It is, essentially, splash and go but it will benefit from a minute or two of soaking.
